Ingredients
  • cups water (600ml)
  • 2 pandan leaves (shredded and knotted)
  • 1 inch ginger (peeled and crushed) (30g)
  • ½ cup gula melaka (shaved) (75g)
  • 2 small sweet potatoes (peeled and cut into ¾ inch cubes) (1 lb/450g)
Instructions
  1. Combine water, pandan leaves, ginger, shaved gula Melaka, and sweet potatoes in a medium saucepan. Bring syrup to a boil. Stir to dissolve sugar.

  2. Reduce heat and simmer for 15 minutes. Turn off stove.

  3. Remove and serve warm or chilled.
