INGREDIENTS

  • 12 oz okra / ladies' fingers (340g)
  • 1 tbsp dried shrimps (washed and soaked for 10 minutes) (8g)
  • 2 tbsp vegetable oil
  • 2 cloves garlic (minced)
  • 1 tbsp sambal belacan
  • 1 tsp sweet soy sauce
  • 2 tsp soy sauce
  • 1 tsp sugar
  • 1 tbsp lime juice

INSTRUCTIONS

  • Rinse and drain okra. Cut off the stalks and trim the ends. Place in a steaming rack.
  • Drain dried shrimp and chop coarsely.
  • In a small saucepan, heat vegetable oil over low heat. Add dried shrimp and cook for 1 to 2 minutes. Add minced garlic and continue to stir fry for another 30 seconds.
  • Place sambal belacan in a small bowl. Transfer cooked dried shrimps and garlic into the bowl. Add sweet soy sauce, soy sauce, sugar, and lime juice. Mix well and set aside.
  • Place okra in a steamer and steam for 7 to 8 minutes. When pierced with a fork, okra should be tender. Transfer steamed okra to a shallow bowl.
  • Spoon dressing over steamed okra. Serve immediately.
